Do you have memories of food that touches all of your senses and brings you back to a time you associate with family and comfort? For me, that would be these apple spice cookies. I recall that my mom would make these often, all throughout the year, but especially when their apple trees were full of fruit in the fall.
I have been going through mom’s extensive recipe collection to organize, protect and preserve them, and much to my delight I found this recipe! Truth be told, I do not know who gave her this recipe but I do know that my mom made these cookies for the longest time and I thought it would be great to share with you.
It didn’t matter which apples she had on hand to use but when I make them I always choose golden delicious. I have vivid memories of the apple trees in my parent’s garden and how awesome it was to pluck a golden or red delicious apple off the tree and eat it right on the spot.
For as long as I can remember, this apple tree in my parent’s garden grew leaning back so as to “show off” it’s abundant fruit production. A beautiful reminder of precious moments spent together in the backyard with mom and dad.
When these cookies are baking, your house smells amazing and my family know’s exactly what I am making!
I love their spiciness and for sure it’s hard to eat just one! They come together easily and yield quite a few.

Apple Spice Cookies

Description
Apple nut & raisin cookies spiced with cinnamon and cloves.
Ingredients
- 1/2 cup margarine
- 1&1/3 cup brown sugar
- 1 large egg
- 1/4 cup apple juice
- 1 cup chopped walnuts
- 1 cup peeled and chopped apples
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp ground cloves
Instructions
- Heat oven to 375F
- Prepare a baking sheet by lining with parchment paper
- Cream together the margarine and brown sugar until fluffy
- Add the egg and beat well
- Blend in the apple juice, raisins, nuts and apples
- In a separate bowl, combine the dry ingredients then mix into the batter
- Drop spoonfuls of batter 2 inches apart onto prepared baking sheet
- Bake for 10-12 minutes
- Remove from the oven when done and let rest for a couple of minutes before removing to a baking rack
