These apple spice cookies with nuts and raisins bring back beautiful memories of family and comfort. I recall that my mom would make these often, all throughout the year, but especially when their apple trees were full of fruit in the fall. Mom would also make these to add to her Christmas cookie platters along with her delicious twist cookies and ciambellette cookies.
I have been going through mom’s extensive recipe collection to organize, protect and preserve them, and much to my delight I found this recipe for apple spice cookies! Truth be told, I do not know who gave her this recipe but I do know that my mom made these cookies for the longest time and I thought it would be great to share with you.
It didn’t matter which apples she had on hand to use but when I make them I always choose golden delicious. I have vivid memories of the apple trees in my parent’s garden and how awesome it was to pluck a golden or red delicious apple off the tree and eat it right on the spot. For as long as I can remember, this apple tree in my parent’s garden grew leaning back so as to “show off” it’s abundant fruit production. A beautiful reminder of precious moments spent together in the backyard with mom and dad.

When these cookies spiced with cinnamon and cloves are baking, your house smells amazing and my family know’s exactly what I am making!

Description
Apple nut & raisin cookies spiced with cinnamon and cloves.
Ingredients
- 1/2 cup margarine
- 1&1/3 cup brown sugar
- 1 large egg
- 1/4 cup apple juice
- 1 cup chopped walnuts
- 1 cup peeled and chopped apples
- 1/2 cup raisins (more if you like)
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp ground cloves
Instructions
- Heat oven to 375F
- Prepare a baking sheet by lining with parchment paper
- Cream together the margarine and brown sugar until fluffy
- Add the egg and beat well
- Blend in the apple juice, raisins, nuts and apples
- In a separate bowl, combine the dry ingredients then mix into the batter
- Drop spoonfuls of batter 2 inches apart onto prepared baking sheet
- Bake for 10-12 minutes
- Remove from the oven when done and let rest for a couple of minutes before removing to a baking rack
